Queen of Hearts Raspberry Preserve

We grow two varieties of raspberries to make this perfect preserve - "Taylor", a late-ripening summer variety universally judged to be the best flavored berry and "Caroline”, a deep red variety that ripens in autumn.

This is my favorite comfort food - irresistible with scones or toast, waffles and crepes, decadent when served over cheesecakes or brownies, and sublime in trifles.

As with all our preserves, we use no pectin or thickeners of any kind, and only about half the sugar of conventional jams.
