Brimming with chunks of peaches, our Peach Preserve is wonderful on toast and muffins, in
crepes and pastries, spooned into yogurt, and just about everywhere you want to use it. (Some customers tell me it's wonderful accompanying such diverse meals as roast pork and duck.)
We pick own organically-grown peaches (varieties "Elberta" and "Reliance") when fully ripe - carefully selecting each fruit rather than stripping the tree all at once.
We peel and chop each peach by hand, add a little lemon juice to keep the color bright and cook it with as little sugar as is needed to ensure a soft set.
As with all our preserves, we use no pectin or thickeners of any kind, and only about half the sugar of conventional jams.
