One of my favorite Comfort Food recipes, great with any of our Preseves!
This recipe is adapted from the old Fanny Farmer. We make them
on our ancient cookstove with an old cast-iron waffle iron, but I bet they'd
work in electric machines too.
- 2 cups flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1-1/4 cup milk
- Yolks of 2 eggs, well beaten
- Whites of 2 eggs, beaten until stiff
- 2 tablespoons melted butter
Mix dry ingredients; add milk gradually, then the well beaten yolks, butter,
and finally the whites of the eggs which have been beaten stiff.
Here's what Fanny Farmer says about cooking them: "A waffle iron should be
well heated on one side, turned, heated on the other side, and thoroughly
greased before iron is filled. In filling, put a a tablespoonful of mixture
in each compartment near centre of iron."
