 Our heirloom Italian peppers, sun-ripened to full flavor and deep red hue,
are the heart of this preserve. Our spicy chile peppers provide sparks of
heat and our lemon basil red-wine vinegar adds a spritely tartness. As
usual, we add sugar, but no pectin or thickeners. This soft-set preserve is
ideal as an hors d'oeuvre spread with crackers and cheese (cream cheese or
sharp cheddar are our particular favorites). It also makes a terrific glaze
for chicken, pork and shrimp and is even yummy on a sandwich.
"El Jefe", a jalapeno pepper variety from Johnny's Seeds that Dancing Bear Tom introduced us to is an exceptional pepper - productive as all get-out, early ripening to red, and hot! We experimented with these when we put up Mad Hatter's Pepper Preserve last week and WOW! It's wonderful. For a short time, we have a choice in this preserve. We have both our original "pleasantly zippy" version of Mad Hatter's, and the new, HOT variety.
