 Our heirloom Italian peppers, sun-ripened to full flavor and deep red hue, are the heart
of this preserve. Our spicy chile peppers provide sparks of heat and our lemon basil vinegar adds a spritely tartness.
This softly-set preserve is ideal with hors d'oeuvres and on a cheese platter. It also makes a terrific glaze for chicken, pork and shrimp and dresses up any humble sandwich.
We can offer our Mad Hatter's Pepper Preserve in two options for heat-seekers and their friends:
Pleasantly Zippy is made with 3/4 Italian Red Corno di Toro peppers and 1/4 Red Jalapenos.
Extra Hot is made with 3/4 Red Jalapenos and 1/4 Italian Red Corno di Toros.
As with all our preserves, we add no pectin or thickeners of any kind, and use only about half the sugar of conventionally made jams and jellies.
