 Our dear friends Tom and Trish grow wonderful peaches at Dancing Bear Farm. The variety is "Reliance", developed at the University of New Hampshire to dependably produce luscious fruit even in northern climates.
This preserve is so good that even our friends from southern states rave about it! It's wonderful on toast and muffins, in crepes, pastries and thumbprint cookies, and just about everywhere you want to use it. (One customer told me it was outstanding as an accompaniment to roast pork...who would have thought?!?!)
As with all our preserves, we use no pectin or thickeners of any kind, and only about half the sugar of conventional jams.
