It's here! Barley's Elderberry Preserve!
These beautiful berries of deep purple produce a preserve of magical flavor. Legendary throughout the world, Elderberries belong in the herbal apothecary as well as the kitchen pantry. Loaded with vitamins and antioxidants, they are renowned for their antiviral and healing powers. The plants are beautiful - tall, graceful shrubs with huge white flowers the size of dinner plates - each one turning into hundreds of tiny purple berries.
We add a few of our own Cortland apples while cooking the elderberries and just enough sugar to ensure a soft set. Inspired by an old New England recipe, we also add a bit of apple cider vinegar to keep the color bright.
Enjoy this magical preserve on scones, muffins and toast. Add a spoonful to yogurt and hot oatmeal for a healthy, hearty breakfast. Explore its use in glazes and sauces for meat and poultry.
As with all our preserves, we use no pectin or thickeners of any kind, and only about half the sugar of conventional jams.
